Confidence to Cook – Resource Pack Launch

On the 27th April the new Confidence to Cook (C2C) resource pack was launched at Deeside Family Centre.

The new resource pack includes a teaching guide for trainers delivering Confidence to Cook, as well as an extensive recipe book.

The event was well attended with a number of organisations taking part including HMP Grampian, Homestart, ACC Adult Learning, Regeneration Matters, Healthy Minds, ACC Wellbeing Team, CFINE, C-Change, NHS Grampian, Criminal Justice Social Work, Inspire, Deeside Family Centre, Alcohol and Drugs Action, and Tillydrone Community Flat.

Various speakers shared their experience delivering Confidence to Cook courses in their organisations. Representatives from HomeStart, HMP Grampian, CFINE, and NHS Grampian contributed.

The speakers were great and gave a real view of how they have all taken the same C2C model and shaped it to fit their service and clients.

This was particularly interesting due to the eclectic mix of focus, resources, and style of delivery.

I really enjoyed the event and was particularly impressed with the way C2C is being used in HMP Grampian.  This initiative demonstrates a great use of the resources and seeing the photos and the work methods undertaken by staff and prisoners, utilising typical store-cupboard and food bank ingredients in such creative and innovative ways was very inspiring.

For lunch attendees were treated to some freshly made soup and cheese scones made at CFINE’s Cook at the ‘Nook training kitchen, as well as some delicious carrot cake provided by Deeside Family Centre using the C2C recipe book. This was a great opportunity for networking and the food went down very well indeed! (see below for the carrot cake recipe).

Special thanks to the volunteers who supported the Aberdeen City Food Network development worker in making the day a success.

The day was really useful. From a facilitators point of view it was really interesting to see what others were doing with the Confidence to Cook programme because we can learn from each other.

Overall, feedback from the event was very positive, with attendees each receiving the new resource pack on a memory stick.

This type of session for C2C trainers would be great for the future, to share practice, resources and tips.

Carrot Cake Recipe

Ingredients (serves 24)

  • 200g Sunflower Margarine
  • 225g Castor Sugar
  • 3 Eggs (beaten)
  • 200g Wholemeal Flour
  • 1 Teasp Baking Powder
  • 1 Teasp Bicarbonate of Soda
  • 1 Teasp Ground Cinnamon
  • 3 Carrots (peeled and grated)

Topping

  • 100g Low Fat Cream Cheese

Method

Pre-heat oven to 220C / 375F / Gas Mark 5

 Mix the margarine and sugar together.

  1. Gradually add the eggs, flour, baking powder, bicarbonate of soda and cinnamon.
  2. Stir in the grated carrots.
  3. Lightly grease and line a roasting tin with greaseproof paper, and pour the mixture into it.
  4. Bake in oven for 35 – 40 minutes.
  5. Test to see if the cake is ready by inserting a skewer into the middle. If it comes out clean the cake is ready. If it comes out sticky, more baking time is required.
  6. Allow to cool on a wire rack.

Spread cream cheese over the cooled cake and cut into squares.

  • This cake is high in fat due to the cream cheese – to reduce the fat, try eating the cake without the topping, the sugar content is also high so enjoy in moderation
  • Icing can be topped with additional grated carrot, passion fruit or grated lemon zest
